Lemon Buttercream Icing

Hello there!  Today I’m sharing a refreshing Lemon Buttercream recipe.  😀  It is heavenly.  I could eat this stuff with a spoon.  It’s not too sweet or sour, it’s just right.  🙂  I choose to dress some lemon cupcakes with it!  To top it off I added a pink fondant lemon slice!  🙂  Put this one in your recipe box, trust me.

Lemon Buttercream Icing by Redbird Recipes

  • 1 cup of unsalted Butter, softened
  • 1/4 tsp clear Vanilla Extract
  • 3/4 tsp Lemon Extract
  • 2 tbsp Milk
  • 4 cups Confectioner’s Sugar


  • Cream the softened butter.
  • Mix in vanilla, lemon, and milk.
  • Mix in 1 cup of sugar at a time.  Use a spatula on the sides of the bowl as needed.
  • Mix until icing forms stiff peaks.

*This icing is best kept cold until 30 minutes before serving.



Neiman Marcus Cookies and An Urban Legend

Why is it called the Neiman Marcus cookie? An Urban Legend

Some of you might recognize it as the $250 Cookie.  This recipe was subject to some well traveled rumors.  I’ve been asked why they were called Neiman Marcus cookies a few times.  Well, my brief research brought me to a story of a lady who requested the recipe from the Neiman Marcus Cafe in Dallas and was reportedly charged $250 for the recipe.  The woman thought she was being charged two-fifty, as in $2.50.  Outraged, by such an inflated fee she took to spreading the recipe for free to as many people as should could.  This story, according to my limited research has been circulating for several decades, even with different recipes and restaurants at the heart of it.  Here is just one of the sites I found http://urbanlegends.about.com/od/fooddrink/a/cookie_recipe.htm.

Though it is an urban legend, it’s crazy how quickly guys and gals can spread around such a delicious recipe.  🙂

I have had trouble finding out who truly created this recipe, but I know one thing for sure, it certainly tastes like $250 cookie.

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups all purpose flour
  • 2 1/2 cup quick oatmeal (chopped finely in food processor)
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 12 oz. semi sweet chocolate chips
  • 4 oz Hershey bar, grated
  • 1 1/2 cup chopped pecans


  • Cream together butter, sugar, and brown sugar.
  • Add in eggs and vanilla.
  • In a separate bowl, mix together flour, oatmeal, salt, baking soda, and baking powder.
  • Mix in dry ingredients until full combined.
  • Add in chocolate and pecans.
  • Drop by the spoon two inches apart on a cookie sheet lined with parchment paper.
  • Bake at 375*F for 6-8 minutes.
